Cut 1 pound thawed frozen fillet of sole in strips. Mix 1 cup orange juice, juice of 1 lemon and 1 lime, 1/4 cup vinegar, 2 t. salt, 1/2 t. pepper, and a broken dried red pepper. Add a few onion rings. Pour over raw fish, cover; refrigerate overnight. The fish is beautifully " cooked" by the fruit acids, not too firm- not too soft. Makes 4 servings.
